The omega-6 fatty acids in caraway seeds have been shown to ease the pain of diabetic neuropathy, reduce the pain and swelling of rheumatoid arthritis, and may help lower high blood pressure.
However, it is as a digestive aid that caraway seeds truly shine. They have long been used to promote relieve sour stomach, and calm intestinal cramps and pain. The essential oil in caraway seeds has been shown to have anti-inflammatory, antibacterial, and antifungal properties. A bit spicy and wonderfully fragrant, consider a cup of caraway seed tea to aid digestion after a meal: simply cover one teaspoon of slightly crushed caraway seeds with boiling water, allow to steep for ten minutes and strain. According to scientists at New York University’s Langone Medical Center, teas made from caraway seeds are also recommended additions to the treatment regimen for periodontal disease and canker sores.
