    Crunchy, slightly sweet, sunflower seeds (also known as kernels) are a classic standalone snack, and equally popular sprinkled on breads, cakes, cupcakes and cookies. The sunflower is native to North America, and their seeds were long used as a high energy food source. Sunflower kernels are incredibly high in vitamin E, an important antioxidant that effectively neutralizes the cellular damage caused by free radicals. Vitamin E exerts a significant anti-inflammatory effect which helps reduce the symptoms of arthritis and asthma. According to researchers at Virginia Polytechnic Institute (Blacksburg, Va.), compared to most nuts and seeds sunflower kernels had the highest levels of healthy phytosterols, a plant-based phytochemical that helps reduce bad cholesterol and may aid in the prevention of atherosclerosis (hardening of the arteries). Sunflower seeds are also an excellent source of B vitamins, and minerals such as copper, magnesium, potassium, selenium, calcium and zinc. High in polyunsaturated fats and monounsaturated fats, and low in saturated fats, clearly sunflower seeds are not only tasty, but heart smart. Another nice surprise with sunflower seeds is their protein content.
