Simply the Best Baklava
-1 (16 oz.) package phyllo dough
-1/4 lb. chopped pistachios
-1/4 lb. chopped walnuts
-1/4 lb. chopped cashews
-1/4 lb. chopped pecans
-1 cup butter
-1 teaspoon ground cinnamon
-1 cup water
-1 cup sugar
-1 teaspoon vanilla
-1/2 cup honey
Preheat your oven to 350 degrees and butter the bottoms and sides of a 9 x 13 inch baking dish. Then, in a bowl, toss together the chopped nuts and cinnamon. Set aside. Next, unroll the phyllo dough and cut the stack to fit the pan. Cover the phyllo with a damp cloth to keep the dough from drying out as you work. Place two sheets of dough in the pan and butter generously. Repeat until 8 sheets are layered then sprinkle a few tablespoons of nut mixture on the top. Top with two sheets of phyllo, butter, and then nuts again, layering as you go. Then, when you need to add the final top layer, make sure it's about 6 to 8 sheets on top.
Then, take a sharp knife and cut the baklava into squares in the pan. Bake for 50 minutes or until crisp and golden. While the baklava is baking, make the glaze by boiling the sugar and water until dissolved. Add the vanilla and honey and simmer for 20 minutes. Remove the baklava from the oven and immediately spoon the glaze over it. Let cool and serve in cupcake wrappers. Leave uncovered to keep from getting soggy.
