Batter up! Baseball is America’s pastime and when you’re gearing up for a baseball party or a little league game, what could be better than serving up some yummy baseball-themed treats?
At SuperiorNutStore.com, one of our favorite ways to make baseball part of a celebration is through fun and festive baseball cupcakes. Able to be packed into your little slugger’s lunchbox or served up at the post-game party, baseball cupcakes are sure to be a hit with any team. The best part is that they’re easy to make – all you need are a few pantry supplies, cupcake liners, and red M&Ms.
For the Cupcakes:
- 1 cup sugar
- ½ cup butter
- 2 eggs
- 2 teaspoons vanilla extract
- 1 ½ cups all-purpose flour
- 1 ¾ teaspoons baking powder
- ½ cup milk
Preheat your oven to 350 degrees. Line a muffin pan with baseball-themed paper liners. If you don’t have baseball themed liners, use red or striped liners. Then, in a medium bowl, beat together the sugar and the butter. Add the eggs, one at a time, and mix until well combined. Beat in the vanilla as well. In a separate bowl, combine together the flour and baking powder. Add the flour mixture to the wet mixture and mix well. Stir in the milk until smooth, then spoon the batter into the lined cups, making sure to only fill them up 2/3 of the way. Bake for 20 to 25 minutes or until it springs back from the touch. Let cool completely before icing.
For the Icing:
- 3 2/3 cups confectioners’ sugar
- 1 ½ sticks of unsalted butter, softened
- 1 to 2 tablespoons of milk
- Red M&Ms
In a mixing bowl, beat the butter until smooth. Gradually add in the sugar until the icing forms, taking care to beat until smooth. If it’s too thick to spread easily, beat in the 1 to 2 tablespoons of milk. Once the icing is made, ice each cupcake smoothly, to make it look like the white of a baseball. Then, take the red M&Ms and place them on their sides in curved columns to look like the laces of a baseball. Serve and enjoy!
