· 2 ¼ cups all-purpose flour
· 2/3 cup sugar
· 2 teaspoons baking powder
· 1 teaspoon salt
· 2 eggs
· ¾ cup milk
· ½ cup butter
· 1/3 cup brown sugar
· 2 large apples, peeled and cored (about 1 ½ cups)
· ¾ cups roasted walnuts
· 1 teaspoon cinnamon
Preheat your oven to 400 degrees. Line a muffin pan with liners or grease it well with a non-stick cooking spray or butter. In a large mixing bowl, combine together 2 cups of flour, the white sugar, baking powder, salt, and cinnamon until well combined. In a separate bowl, combine together ¼ cup flour, brown sugar, and ¼ cup butter. Mix until crumbly with a fork and set aside. In another bowl, beat the milk and eggs together until well-blended. Add the remaining ¼ cup of butter, melted, into the mixture. Then, add the milk and egg mixture to the large bowl of flour mixture. Stir until combined, carefully folding in the apples and roasted walnuts. Then, spoon the batter into the muffin pan, topping each muffin with a little bit of the brown sugar mixture. Sprinkle on additional cinnamon if needed. Bake for 20 to 25 minutes, or until a toothpick comes out clean when inserted. Let cool for several minutes before removing them from the pan.
