Sliced Almonds Pack a Nutrient Punch in This Delicious Kale Salad
The delicious and nutrient packed crunch of kale is only a secondary character in this delicious kale, pomegranate, and sliced almonds salad. The mixture of delicious tender kale, raw and flavorful pomegranate, and nutty sliced almonds make this the perfect side dish or main course. By adding sliced almonds and an assortment of seeds, you not only get another dimension of crunch, but a nutrient packed punch. If you find pomegranate seeds hard to find in stores, substituting craisins or cranberries will suffice. Recipe Below: Sliced Almond, Kale, and Pomegranate Salad ½ pound kale 2 cups pomegranate seeds 2 tablespoons chia, sunflower, or hemp seeds ½ cup sliced almonds ¾ cup extra-virgin olive oil ¼ cup balsamic vinegar Salt Fresh-ground pepper 1 teaspoon dried herbs With all produce, it’s important to thoroughly wash and dry before preparing the rest of the dish. Wash and shake off any water from the kale. Remove the ribs and stems of the kale and discard. You can either keep the leaves whole or chop until they are fine, but still slightly leafy.
