Sliced Almonds Pack a Nutrient Punch in This Delicious Kale Salad

The delicious and nutrient packed crunch of kale is only a secondary character in this delicious kale, pomegranate, and sliced almonds salad. The mixture of delicious tender kale, raw and flavorful pomegranate, and nutty sliced almonds make this the perfect side dish or main course. By adding sliced almonds and an assortment of seeds, you not only get another dimension of crunch, but a nutrient packed punch.

If you find pomegranate seeds hard to find in stores, substituting craisins or cranberries will suffice. If youíre looking for a nutritious and delicious treat, thereís nothing better than this satisfying sliced almonds, kale, and pomegranate salad. Recipe Below:

Sliced Almond, Kale, and Pomegranate Salad

Ĺ pound kale

2 cups pomegranate seeds

2 tablespoons chia, sunflower, or hemp seeds

Ĺ cup sliced almonds

ĺ cup extra-virgin olive oil

ľ cup balsamic vinegar


Fresh-ground pepper

1 teaspoon dried herbs

With all produce, itís important to thoroughly wash and dry before preparing the rest of the dish. Wash and shake off any water from the kale. Remove the ribs and stems of the kale and discard. You can either keep the leaves whole or chop until they are fine, but still slightly leafy.

Begin combining the freshly washed kale, pomegranate seeds, seeds, and sliced almonds in a large serving bowl. Toss the salad thorougly, set aside, and begin preparing the balsamic dressing.

Combine the olive oil and balsamic vinegar in a jar or other container with a lid. Add salt and pepper, desired herbs, and screw the lid in place. Shake vigorously. Adjust the recipe to taste to get the desired consistency and flavor. Homemade vinaigrette will keep on the counter for several weeks, but it is recommended to refrigerate if using fresh ingredients. Separation will occur when the dressing sits for a while. Shake the dressing well before applying to your salad.

To increase the flavor and add more greens and nutrients to the salad, consider adding olives, onion, chives, apples, lemon juice, raisins, and other desired fruits and vegetables. More sliced almonds and seeds can be added as desired, and to increase the nutty earthy flavor!
