Sun dried tomatoes are fairly simple – tomatoes that have been left out in the sun where the majority of their water content evaporates. This leaves all the flavor and nutrients of the tomato intact, but without the water. Italians used to sun dry their tomatoes in preparation for the long winter, when vegetables would become scarce.

Angel Hair Pasta With Sun Dried Tomatoes

Ingredients:
8 oz. sun dried tomatoes, marinated in olive oil and herbs
1 lb. angel hair pasta
2 to 3 garlic cloves, minced
2 tbsp. olive oil
3 tbsp. parsley, chopped
1/2 c. Parmesan cheese


Directions:
Chop up the sun dried tomatoes. Mince the garlic finely. In a skillet, sauté the garlic in olive oil until lightly brown, then add the tomatoes. Sauté the mixture briefly and turn off the heat. Make the pasta according to the manufacturer's directions. Toss the hot pasta with the tomatoes when cooked. Top with Parmesan cheese to taste. Garnish with fresh parsley. Serve hot.
