1 lb. Brazil nuts, chopped 1 lb. dates, coarsely chopped 1 cup halved candied cherries ¾ cup all purpose flour ¾ cup sugar 1 tablespoon sherry 3 large eggs, at room temperatures 1 teaspoon orange zest ½ teaspoon salt ½ teaspoon baking powder Directions:
First, preheat oven to 350 degrees. Grease a 9x5 inch loaf pan with butter and line with aluminum foil, also greased with butter. Be sure that the edges of the foil hang over the sides of the pan. Next, in a large mixing bowl, combine together Brazil nuts, dates, orange zest, and cherries. In a separate bowl, sift together baking powder, flour, sugar, and salt. Add to the fruit and nut mixture until well incorporated. Then in a separate bowl, beat together eggs and sherry. Stir the egg mixture in with the fruit mixture until batter forms. Spoon the batter into the loaf pan. Bake for about 70 to 80 minutes or until brown and toothpick inserted into the cake comes out clean. Remove from oven and cool in the pan for 1 hour. Turn the cake out into a wire cooling rack. Remove foil and let cool completely. Serve.
