Pistachio Butter: Unexpected Flavor – and Perfect with Chocolate!

Ready to try the amazing taste of chocolate and pistachios? All you need are a few ingredients from your pantry and pistachio butter and chocolate from Here’s our recipe for irresistible pistachio butter cups:

Pistachio Butter Cups

9 ounces semi sweet chocolate, coarsely chopped

9 ounces milk chocolate, coarsely chopped

½ cup pistachio butter

½ cup confectioner’s sugar

2 tablespoons butter at room temperature

1 tablespoon shortening

Line 35 miniature muffin cups with paper liners. Set aside.

In a microwave safe bowl, combine together the pistachio butter, butter, and salt. Microwave for one minute or until soft, but not melted. Stir in the confectioner’s sugar. Set aside.

In a double boiler over medium heat, melt the chocolate and shortening, taking care to stir frequently.

Drop a teaspoon of melted chocolate into each muffin cup. Top with a small teaspoon of pistachio butter mixture. Add another teaspoon of chocolate to top it off. Refrigerate until set and then serve.
