Begin by preheating your oven to 350 degrees. Then, in a mixing bowl, beat together the butter, vanilla, and brown sugar until smooth. Add the eggs, one at a time, mixing after each addition. Then, in a separate bowl, whisk together the flour, baking soda, cinnamon, ad salt. Add the dry mixture to the wet mixture gradually, stirring until just combined. Stir in the oats, cherries, and chocolate.

Next, drop the dough by the tablespoonful onto a lined cookie sheet. Bake the cookies for 10 to 12 minutes, or until the bottom edges are lightly browned. Remove from the oven and cool on the pans for a few minutes before removing the cookies to finish cooling on wire cookie racks. Let cool completely and then serve!

Besides these cookies, dark chocolate chips and dried cherries can also be mixed into homemade granola for a tasty treat. Or, if you like oatmeal, mix together a few chocolate chips and dried cherries into your next bowl. You can also top ice cream or yogurt with dried cherries and dark chocolate for a boost of flavor as well as antioxidants (dark chocolate is rich in antioxidants!).
