Native to Bolivia, Chile, and Peru, quinoa is a seed, that’s considered a pseudo-grain. It’s cooked like a grain, and is a complete protein (15% protein content) - a rarity in the plant world. This means it contains all nine essential amino acids, and it’s particularly high the amino acid lysine, which aids in calcium absorption and bone health. High in magnesium, quinoa should be on the menu of anyone bothered by migraines. Magnesium helps relax blood vessels, and works to prevent the characteristic throbbing migraine pain. Combined with the riboflavin (vitamin B2), quinoa may also help reduce the frequency of migraine attacks. Magnesium also helps prevent high blood pressure, heart arrhythmias, and heart disease.

Cultivated by the Incans in South America, quinoa is light, and easy to digest. For those diagnosed with gluten intolerance, or celiac disease, gluten-free quinoa is one of the few grains that will not cause an allergic reaction. Look to quinoa as a tasty and excellent source of manganese and copper; two important nutrients that form the building blocks of antioxidant enzymes that protect red blood cells from damage by toxic free radicals. Quinoa is also a potent source of iron, the key mineral needed to fight anemia and the fatigue that often accompanies it. A true superfood, quinoa is high in vitamin E, a nutrient vital to fighting cancer, heart disease, and cognitive decline. According to the National Institutes of Health’s Office of Dietary Supplements, large prospective studies have found that high dietary intakes of vitamin E reduces the risk of developing cataracts and age-related macular degeneration. Don’t overlook this whole grain as an important source of fiber. Quinoa is high in insoluble fiber, which offers protection against a panoply of illnesses including heart disease, breast and colon cancers, gallstones, type 2 diabetes, and even childhood asthma.
